Garden Slaw

INGREDIENTS

Slaw Ingredients

  • 1/2 head cabbage

  • 1/2 radicchio

  • 1 fennel bulb

  • 5 leaves of kale

  • 2-3oz Sugar snap peas ( I used sweet peas :( )

  • 1/2 cup spiced pumpkin seeds (salt, Chipoltle pepper)

  • 1/2 cup dried cranberries

Dressing

  • 1/2 c yogurt

  • 1/2 c Mayo

  • 1/2 sour cream

  • 1 clove of garlic

  • 1/4 sweet onion

  • 2 T white balsamic

  • 1 T flavored balsamic ( I used a honey thyme)

  • 1 T Dijon

  • 1 T Chile Sauce ( Sambal or any Asian Chile Sauce)


THIS IS HOW WE DO IT

  • Shred or slice very thin cabbage, radicchio, fennel, kale

  • Chop snow peas

  • Place all in a large bowl

  • Add cilantro, pumpkin seeds, cranberries

  • Mix all together

Dressing

  • Mix all in a bowl

  • Add 2/3 dressing to vegetables. Taste. Add more as you like. Don’t overdress

  • Remember as the slaw sits, it will draw out moisture and flavor from all the vegetables

  • Sit for about an hour before serving
